Gerald Crawford, director of dining services at Life Care Center of Cleveland, recently had one of his recipes named Sandwich of the Month in a national magazine.
“Food Management,” a publication for the food service industry, featured Crawford’s Straw-Brie Tuna Surfer. The sandwich features tuna loin, brie cheese, spring greens and strawberries on a croissant.
“It’s a light and healthy option with a summer, beach feel,” Crawford described. “I created this sandwich to honor my wife, mother, mother-in-law and sister-in-law for all the things they do for all of my family.”
The item is on the facility’s always-available menu and is popular with residents and associates alike.
Not only does the recipe get good taste reviews, but it’s healthy too.
“Tuna has an excellent protein-to-fat ratio, no sugar and is high in magnesium, potassium, thiamin and vitamin B6,” Crawford explained.
Crawford often serves sweet potato fries with the sandwich, though he also recommends fruit salad, chips, pasta or potato salad as sides.
“It’s vital to understand that when we prepare our food with true love and compassion for those we are feeding, that love shows in our products,” Crawford shared. “That is what we teach and practice here at Life Care Center of Cleveland, and occasionally the word gets out.”
